Born in Marzamemi, Sicily, Chef Vince began cooking at just 12 years old and trained under a Florentine chef before completing his apprenticeship in Torino. His commitment to purity, tradition, and excellence laid the foundation for La Spiga’s philosophy.

    Today, we remain true to his vision. All of our dishes are made to order—never pre-prepared. We handcraft everything from naturally reduced sauces to house-ground meats and handmade sausages. Our ingredients are of the highest quality: wild-caught fish, organic eggs from free-range chickens, and meats free of hormones and antibiotics.
